Ingredients
Scale
For the Burrito:
- 4 large flour tortillas (burrito-sized)
- 1 lb ground beef
- 1 packet (1 oz) taco seasoning
- ½ cup water (for seasoning the beef)
- 1 cup cooked Mexican-style rice (or plain white rice)
- 1 cup shredded cheddar cheese (or Mexican cheese blend)
- ½ cup nacho cheese sauce (store-bought or homemade)
- ½ cup sour cream
- ½ cup refried beans (optional)
For Grilling:
- 2 tbsp butter (or cooking spray for grilling)
Instructions
Step 1: Prepare the Beef
- Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it up with a spatula.
- Drain excess grease and stir in the taco seasoning and ½ cup water. Simmer for 3–5 minutes until the liquid is absorbed. Remove from heat.
Step 2: Warm the Tortillas
- Heat the tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable.
Step 3: Assemble the Burritos
- Lay a warm tortilla flat on a clean surface. Spread 2 tbsp of refried beans (if using) in the center.
- Add ¼ cup of cooked rice, followed by ¼ cup of seasoned beef.
- Drizzle 2 tbsp of nacho cheese sauce and 1 tbsp of sour cream over the beef.
- Sprinkle ¼ cup of shredded cheese on top.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom to seal everything inside.
Step 4: Grill the Burritos
- Heat a large skillet or griddle over medium heat. Add ½ tbsp of butter or lightly spray with cooking oil.
- Place the burrito seam-side down and grill for 1–2 minutes per side, pressing lightly with a spatula, until golden brown and crispy.
- Repeat with the remaining burritos.
Step 5: Serve and Enjoy
- Remove from heat and let the burritos cool slightly before slicing in half. Serve with extra nacho cheese sauce, salsa, or guacamole on the side!
Notes
- Protein Variations: Swap ground beef for grilled chicken, shredded beef, or black beans for a vegetarian option.
- Spice Level: Add chopped jalapeños or a dash of hot sauce for extra heat.
- Make it Healthier: Use whole wheat tortillas, Greek yogurt instead of sour cream, and lean ground turkey.
