Description

These Classic Vanilla Cookies are delightfully soft on the inside with a subtle crisp around the edges. Bursting with pure vanilla flavor and a tender, buttery texture, they make the perfect treat for any time of day. Enjoy them with a cup of tea or share them at your next gathering!

Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 2–3 minutes).
  3. Mix in Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Form the Dough: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Shape the Cookies: Using a tablespoon or a small cookie scoop, drop rounded dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Place the baking sheet in the preheated oven and bake for 10–12 minutes, or until the edges are just beginning to turn a light golden color.
  8. Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Variations: For a citrus twist, add 1 teaspoon of lemon zest to the dough. You can also sprinkle a little granulated sugar on top of each cookie before baking for extra crunch.
  • Dietary Adjustments:
    • Dairy-Free: Substitute unsalted butter with a high-quality dairy-free butter alternative.
    • Gluten-Free: Replace all-purpose flour with a gluten-free flour blend (adjustments in liquid may be needed).
  • Tips:
    • Ensure the butter is softened (not melted) for the best texture.
    • Do not overmix once the flour is added to prevent tough cookies.
    • These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
