Ingredients
Scale
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 2–3 minutes).
- Mix in Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Form the Dough: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Shape the Cookies: Using a tablespoon or a small cookie scoop, drop rounded dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Place the baking sheet in the preheated oven and bake for 10–12 minutes, or until the edges are just beginning to turn a light golden color.
- Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Variations: For a citrus twist, add 1 teaspoon of lemon zest to the dough. You can also sprinkle a little granulated sugar on top of each cookie before baking for extra crunch.
- Dietary Adjustments:
- Dairy-Free: Substitute unsalted butter with a high-quality dairy-free butter alternative.
- Gluten-Free: Replace all-purpose flour with a gluten-free flour blend (adjustments in liquid may be needed).
- Tips:
- Ensure the butter is softened (not melted) for the best texture.
- Do not overmix once the flour is added to prevent tough cookies.
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
