Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups beef broth
- 1 cup elbow macaroni
- 1 tsp dried Italian seasoning
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Brown ground beef in a large pot and drain excess fat.
2. Add onion, garlic, carrots, and celery. Cook until softened.
3. Stir in diced tomatoes, beef broth, Italian seasoning, and bay leaf. Bring to a boil.
4. Simmer for 15 minutes.
5. Add macaroni and cook until tender, about 8–10 minutes.
6. Season with salt and pepper. Remove bay leaf.
7. Garnish with parsley and serve warm.
Notes
For best results, cook macaroni al dente so it holds up well in leftovers.
