Description

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (110°F)
  • 2 tablespoons olive oil (plus extra for brushing)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 teaspoons dried Italian herb blend (a mix of basil, oregano, thyme, and rosemary)
  • 2 cloves garlic, minced (optional for extra flavor)
  • Additional dried herbs (optional, for topping)

Instructions

Activate the Yeast:

  • In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for 5–10 minutes until the mixture becomes frothy.

Mix Dry Ingredients:

  • In a large bowl, whisk together the all-purpose flour, salt, and dried Italian herb blend.

Form the Dough:

  • Create a well in the center of the dry ingredients. Pour in the frothy yeast mixture and olive oil.
  • Stir until a rough dough forms, then transfer it onto a lightly floured surface.

Knead:

  • Knead the dough for about 8–10 minutes until it becomes smooth and elastic.

First Rise:

  • Place the kneaded dough in a lightly oiled bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Prepare for Baking:

  • Preheat your oven to 375°F (190°C).
  • Punch down the risen dough. If using, gently knead in the minced garlic and mix in both the Parmesan and mozzarella cheeses (reserve a little cheese for topping, if desired).

Shape the Dough:

  • Shape the dough into a loaf or round and place it on a lightly greased baking sheet or into a loaf pan.
  • Brush the top lightly with olive oil and, if desired, sprinkle additional dried herbs (and a bit of extra cheese) on top.

Bake:
