Description
This Healthy Broccoli Cheddar Soup is creamy, cheesy, and wholesome. A lighter version of classic cheddar soup, packed with fresh broccoli, carrots, and sharp cheddar for a cozy meal in under 40 minutes.
Ingredients
- 1 tablespoon olive oil or butter
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups broccoli florets (fresh or frozen)
- 1 large carrot, shredded or diced
- 4 cups low-sodium chicken broth (or vegetable broth)
- 1 cup milk (or unsweetened almond milk for dairy-free)
- 2 tablespoons flour (or cornstarch for gluten-free)
- 1 ½ cups sharp cheddar cheese, shredded
- ½ teaspoon paprika
- Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook until soft, about 4 minutes. Stir in garlic and cook for 1 minute.
3. Stir in broccoli and carrots. Pour in broth and simmer for 15 minutes until tender.
4. In a bowl, whisk milk and flour until smooth. Stir into soup and cook 5–6 minutes until thickened.
5. Lower heat and stir in cheddar cheese until melted.
6. Season with paprika, salt, and pepper. Serve hot.
Notes
For extra creaminess, blend half the soup with an immersion blender.
Use sharp cheddar for maximum flavor with less cheese.
Avoid pre-shredded cheese for the smoothest texture.
