This hearty hamburger stew is a one-pot wonder made with ground beef, potatoes, carrots, and vegetables simmered in a savory broth. It’s budget-friendly, comforting, and perfect for busy weeknights.
Ingredients
- 1 lb ground beef (minced meat)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 medium potatoes, cubed
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen peas or green beans
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat.
2. Add onion and garlic; sauté for 2–3 minutes until fragrant.
3. Stir in carrots, celery, and potatoes. Cook for 5 minutes.
4. Pour in diced tomatoes and beef broth. Add thyme, paprika, salt, and pepper. Stir well.
5. Cover and simmer on low heat for 30 minutes until vegetables are tender.
6. Stir in peas or green beans and cook for another 5 minutes.
7. Serve warm with bread or salad for a complete meal.
Notes
For extra flavor, add a splash of Worcestershire sauce or soy sauce.
Freeze in portions for up to 3 months.
